Moqueca (moo-KAY-kah)

Bahia's most typical dish is a stew of fish and shrimp cooked in red palm oil. It is always served boiling hot in an earthenware pot. I found a delicious vegetable version (corn, green beans, carrots, squash, green olives, peppers.) The dish that looks like mashed potatoes is manioc/yucca.
